St. Patrick’s Day Rainbow Fruit Platter

This is a fun fruit platter to go with the theme of St Patrick’s Day. It is great as an afternoon snack and your kiddos are bound to have tons of fun helping you assemble the rainbow while you make the dip that is the “clouds”.

For the dip, it is 2 Chobani Lemon Creme Greek Yogurts, lemon juice, honey and vanilla extract. Very simple!

Mix 1 teaspoon each: vanilla extract, lemon juice and honey into each yogurt and stir to combine.

Assemble rainbow fruits in the shape an arc or a rainbow. You can customize and pick your favorites in each color in the elements of the rainbow. Kinda like what you learned in school, ROYGBIV

I used:

Red: Strawberries and Raspberries

Orange: Oranges

Yellow: Mangoes, Pineapple

Green: Kiwi, Apples, Pears

Blue: Blueberries

Purple: Blackberries

You can absolutely substitute your favorites in place of these listed above to make it your own.

Ingredients:

Rainbow

Strawberries

Raspberries

Oranges

Mangoes

Pineapples

Kiwis

Apples

Pears

Blueberries

Blackberries

Dip

2 Chobani Lemon Creme Greek Yogurt cups

2 teaspoons lemon juice

2 teaspoons vanilla extract

2 teaspoons honey

Directions:

1. Assemble fruit in an arc shape making one line for each color of fruit.

2. In each yogurt, add 1 tsp each: lemon juice, vanilla extract and honey and stir.

3. Place one yogurt at each end of the rainbow and serve!
