So I have been noticing a trend of charcuterie boards lately. You probably have seen them too. Honestly it is just a fancy name for a meat and cheese board. It is something you can completely customize and make your own.

I love the idea of a snack board. Some nights we are so “over” or “sick of” the meals in our normal rotation and we end up eating a bunch of vegetables and leftovers just to get rid of them. A snack board is just all of that in one place. This is one I put together to resemble the colors of the Irish flag for St. Patrick’s Day.
I love the bright colors of the flag. I even have one tattooed on my wrist. Well.. not just the flag. It is part of a tribute to my late grandpa who was (and still is) my hero.
Alright back to the food lol.
Pictured below is (almost) everything I used on this board.
For the green section on the left:
- Cucumbers
- Kiwis
- Pears
- Granny Smith Apples
- Guacamole
- St. Patrick’s Day Tortilla Chips
For the white section in the middle:
- Organic Mild White Cheddar slices cut with a shamrock cookie cutter
- White corn tortilla chips
- Ranch dressing
For the orange section on the right:
- Oranges
- Orange bell peppers
- Baby carrots
- Buffalo chicken dip
I have to admit I struggled with the orange section. There are very few orange colored foods that I can eat these days. I found out recently that I am allergic to a natural color and flavor additive called annatto. It is in EVERYTHING orange pretty much. I never realized I was allergic before because companies used to use artificial colors and flavors to make things like Kraft Mac and Cheese, Cheddar Cheese, Goldfish crackers, etc. It is mostly processed stuff that I cannot have so it is probably better for me anyways.
I will say.. that buying cheese is more difficult. Most companies do not make shredded cheese that does not have annatto unless you want mozzarella or an Italian blend (which is not a good substitute for cheddar in a lot of cases.. let me tell you.
But I will continue to shred the cheese I can have until that changes. A total first world problem and I know it.
St. Patrick’s Day Snack Board
Time: 25 minutes
Ingredients:
For the green section on the left:
- Cucumbers
- Kiwis
- Pears
- Granny Smith Apples
- Guacamole
- St. Patrick’s Day Tortilla Chips
For the white section in the middle:
- Organic Mild White Cheddar slices cut with a shamrock cookie cutter
- White corn tortilla chips
- Ranch dressing
For the orange section on the right:
- Oranges
- Orange bell peppers
- Baby carrots
- Buffalo chicken dip
Directions:
- Wash all the fruits and vegetables.
- Slice all fruits and vegetables
- Fill small ramekins with guac, ranch and buffalo chicken dip
- Assemble the board and serve
Here it is all put together. So much fun and does not take nearly as long as it looks like it would!
