Simple Meal Prep Chicken

I don’t know about you guys but I definitely prefer to bring my lunch to work. That way, I spend less money and I know what is going into my food. As someone who has suffered from stomach problems, it is comforting to know that I can plan good meals that won’t leave me feeling gross and bloated for the second half of my work day.

One of my favorite things to prep is chicken. I do this in my crockpot on Sundays and it will ensure I have protein that I can add to any recipe I want to make. It’s versatile and simple.

So.. for this recipe all you need is chicken, salt, pepper, garlic, olive oil and some non-stick spray. These ingredients are ones I keep on hand at all times. This takes 4 hours to make, BUT it only takes 5 minutes of prep time or active time to get it started.

Ingredients:

1-2 lbs raw chicken, trimmed and ready to cook

salt and pepper to taste

1-2 tsp minced garlic

2 Tablespoons olive oil

Directions:

  1. Spray your crockpot with non stick spray and put olive oil in bottom
  2. Salt and pepper both sides of the chicken
  3. Place the raw chicken in the crockpot
  4. Add minced garlic
  5. Cook on high for 4 hours
  6. In the last 30 minutes, shred and add back to the crockpot to finish cooking
