I don’t know about you guys but I definitely prefer to bring my lunch to work. That way, I spend less money and I know what is going into my food. As someone who has suffered from stomach problems, it is comforting to know that I can plan good meals that won’t leave me feeling gross and bloated for the second half of my work day.
One of my favorite things to prep is chicken. I do this in my crockpot on Sundays and it will ensure I have protein that I can add to any recipe I want to make. It’s versatile and simple.
So.. for this recipe all you need is chicken, salt, pepper, garlic, olive oil and some non-stick spray. These ingredients are ones I keep on hand at all times. This takes 4 hours to make, BUT it only takes 5 minutes of prep time or active time to get it started.
Ingredients:
1-2 lbs raw chicken, trimmed and ready to cook
salt and pepper to taste
1-2 tsp minced garlic
2 Tablespoons olive oil
Directions:
- Spray your crockpot with non stick spray and put olive oil in bottom
- Salt and pepper both sides of the chicken
- Place the raw chicken in the crockpot
- Add minced garlic
- Cook on high for 4 hours
- In the last 30 minutes, shred and add back to the crockpot to finish cooking
