Black Bean Nachos

One of my favorite recipes for a quick meal, a late night snack, or even an appetizer to serve when we have guests is nachos. We probably eat nachos once a week. There are so many ways to customize this recipe that we just do not ever get sick of it. It’s also a great recipe for couples or groups that don’t love all the same ingredients. For example, Jonathan LOVES spicy food and often drenches his in hot sauce and jalepenos. As for me? I’m more of a mild banana pepper fan!

Here is how these are made:

First you want to preheat the oven to 350 degrees Fahrenheit and like a baking sheet with aluminum foil and spray with nonstick spray. Gather all your ingredients.

Spread tortila chips evenly and flat across the baking sheet and then add your toppings.

We like to make several different kinds. For this recipe, we used tortilla chips, black beans, fresh tomatoes, cheese and salt and pepper.

Add all but the cheese first and then sprinkle cheese on top.

Here a close up once all ingredients were added.

Then bake for 5-7 mins or until cheese is melted and serve warm. We add things at the end sometimes, like sour cream, guac, etc.
