Instant Pot Red Mashed Potatoes

I love these mashed potatoes. They are way easier than making them on the stove. This recipe eliminates the time watching the Pot to see if it’s boiling and checking the potatoes to see if they are tender enough. It also eliminates the work of mashing them.

If you don’t like the skins, feel free to peel them. I like the texture they create when you don’t peel them. Plus, the skins are a good source of fiber.

If you have a hand held mixer or a stand mixer, you will never go back to mashing potatoes by hand again.

Instant Pot Red Mashed Potatoes

Prep Time: 5 minutes

Cook Time: 25 minutes (12 minutes cooking, plus time to come to pressure)

Ingredients

2.5 pounds red potatoes, diced

1 cup water

1 tsp minced garlic

1/2 tsp salt

1/2 tsp black pepper

4 oz cream cheese

4 tablespoons butter

Directions

  1. Wash and dice red potatoes. Add water to Instant Pot insert and add potatoes on top. Season with garlic, salt and pepper.

2. Pressure cook for 12 minutes. Do a quick release of the pressure.

3. Add cream cheese and butter and let soften for a few minutes.

4. Use a potato masher or mixer to combine ingredients.

5. Serve!
