These cookies have 5 ingredients and take about 10 minutes to put together the “dough”. I say “dough” because it is a bit more of a batter consistency. Very budget friendly, but flavorful and brightly colored so they will seem like they are a complicated dessert.
When I had coworkers taste test these, so many people were intrigued by the color of the cookies.
Their appearance makes them seem like they would taste gross and artificial but the fresh lemon creates a great balance that combats the overly sweetness.
To make these cookies:
Add strawberry cake mix to a bowl. Just the powder. Ignore the directions on the box.
Add 2 eggs and 1/3 cup vegetable oil.
Add juice from one lemon.
Add 1/2 teaspoon of lemon zest.
Mix together until the powder is fully incorporated. You will still have lumps but that is okay. Line a cookie sheet with parchment paper and scoop cookies. I used a large cookie scoop but you can use whatever size you would like or even use spoons.
Bake 12-15 minutes.
Strawberry Lemonade Cookies

Ingredients
1 box strawberry cake mix powder
2 eggs
1/3 cup vegetable oil
Juice from 1 lemon
1/2 tsp lemon zest
Directions
- Preheat oven to 350 degrees Fahrenheit and line two baking sheets with parchment paper.
- Mix all ingredients together.
- Scoop cookies with a cookie scoop onto baking sheet.
- Bake 12-15 minutes. Let cool 5 minutes before transferring to a wire rack to finish cooling.
