This is one of my favorite new meal prep recipes. It has tons of exotic flavors that go so well together and it just tastes FRESH!
It is perfect for when you need a healthy meal to boost your afternoon or fill you up with nutrients after a long day.
I loved eating these for lunch and was full all afternoon. I also noticed that it was so flavorful that I did not at all get sick of this recipe. I ate it 3 times in a row and I honestly wished that I had made it for all 5 days of my work week.
You should give this a try. It is the Southwest-Mediterranean combo you did not even realize you were missing from your meal prep or menu arsenal. Great for a girls night dinner too!
So to make these bowls I prepared classic falafel patties that are coming soon to the blog. I baked them so they would be a little bit on the lighter side but you can use your favorite falafel recipe and you can even fry them if you want some extra crunch in the bowl. I personally did not feel like it needed that and I enjoyed that the falafels felt fresh and healthy when I mixed them up into the rest of the ingredients.
Between the lime juice and the hummus, this salad does not need dressing. A major bonus if you are looking for some lighter options.

Vegan Southwest Falafel Bowl
Prep time: 1 hour (Cook Time: 30 minutes)
Ingredients:
1 head of lettuce
1 package grape tomatoes
1 orange bell pepper
1 15 oz. can black beans, drained
1 15 oz. can corn, drained
1 container black bean hummus
6 medium sized falafel patties
1 lime, sliced
Directions:
1. Wash and chop lettuce, bell pepper, lime and tomatoes
2. Drain black beans and corn
3. Prepare containers or bowls with layers of lettuce, veggies, hummus
4. Top with cooled falafels
