Instant Pot Mac & Cheese

This is one of the best mac & cheese recipes I have ever had and it is easily the fastest way I have found to cook it that does not involve buying the processed stuff that comes from a box.

It tastes like it took a lot longer to cook and no one will suspect it took less than 30 minutes to put together and serve.

Great as a side dish or main dish. And you can swap out these cheese with whichever are your favorites to make it your own!

You can make it more substantial by adding cooked chicken, bacon, veggies, etc.

Instant Pot Mac & Cheese

Prep Time: 5 minutes   Cook Time: 14 minutes (including time to come to pressure)

Total Time: 25 minutes

Ingredients

16 oz elbow noodles

1/2 teaspoon salt

1/4 teaspoon black pepper

4 tablespoons butter

4 cups water

1 to 1 1/2 cups half and half

3 cups shredded white cheddar cheese

1/2 cup provolone cheese

  1. Combine uncooked noodles, salt, pepper, butter and liquid in Instant Pot. Put lid on Instant Pot and seal the vent.

2. Cook on pressure cooker setting at high pressure for 4 minutes.

3. When cooking has finished, do a quick release by opening the vent with a pot holder to release pressure.

4. Remove lid and stir in half and half. Add cheese and stir until cheese has melted.

You will want the cheese to be fully incorporated like in the picture below.

5. Serve!
