Carrot Cake Energy Balls

Another installment in the no bake energy ball category. These are perfect for spring when you need the extra vitamins to get in shape for summer and to help on those gloomy, cold and gray days.

These Energy Balls have carrot cake flavors but are full of healthy things that will give you a great afternoon boost.

I’m sure many of you are skeptical because liking carrot cake is not really a popular opinion, but these are good!

If you are a carrot cake with pineapple fan, add chopped dried pineapple to these as well.

The almond butter used in these is a bit pricey.. but it’s worth it and you can use it to make my Coconut Almond Butter Cookies too.

The almond butter I used can be found at Publix, Target, Kroger and even Amazon. It’s Maranatha brand. I included this Find Near You link for you! πŸ™‚

A more budget friendly alternative would be plain almond butter and adding 1/4 cup shredded coconut. You will change the texture a bit but flavor will be very similar.

Carrot Cake Energy Balls

Prep Time: 10 minutes

Chill Time: at least 10 minutes

Ingredients:

1/2 cup whole oats

1/2 cup coconut almond Butter

1/4 cup raisins

1/4 cup shredded or grated carrots

1/2 teaspoon cinnamon

1/2 teaspoon vanilla extract

1/2 teaspoon honey

Directions:

1. Combine all ingredients in a bowl

2. Shape into 1 inch balls with hands or a small cookie scoop

3. Chill in fridge minimum of 10 minutes

Serve and enjoy!
